A carbon iron pan from the French company De Buyer.
A frying pan that reaches high temperatures quickly, allows for uniform and quick heat distribution that provides precise searing and roasting of meats mainly, but suitable for all types of food. Excellent for creating a Maillard reaction to preserve the juiciness of the meat during grilling. It resembles cast iron pans in its properties, but without the heavy weight that characterizes these pans.
Using a pan requires an initial seasoning procedure, and frequent greasing of the pan, without the use of degreasers or washing in the dishwasher. And despite the large investment in the maintenance of the pan, it will give you back a perfect roast, without competition.
